Savory Blueberry & Lemon Glaze

Ingredients

Method

  • Thoroughly heat up a medium sauce pan over medium-low heat. Add NEOO lemon olive oil. Let the oil heat until it bubbles slightly (the pan is too hot if it begins to smoke). Add the shallots, garlic, and rosemary. Saute until fragrant and golden brown.
  • Add the honey, blueberries, lemon zest, salt and pepper. Whisk in the NEOO wild aged blueberry dark balsamic vinegar. Reduce heat to low and simmer for about 20 minutes. Whisk occasionally. The sauce will reduce and the blueberries will soften.
  • Turn off the heat and whisk in the lemon juice. Give a taste and adjust salt as needed. Let the glaze rest for about 10 minutes.
  • Serves as a fresh summer meal with chicken and salad!

Notes

  • It will thicken as it rests and cools down and is even better the next day!
  • Other great protein pairings are: pork, filet mignon or duck.
  • We added ¼ tsp more salt after tasting. It really brings out the flavors!
