Ingredients
- Water (1 ½ c)
- Salt (¼ tsp)
- Honey (½ c)
- Watermelon, cubed (3 c)
- Basil, roughly chopped ( ½ c. packed)
- Spearmint leaves, roughly chopped ( ½ c. packed)
- Zest of 1 lime
- NEOO Organic Apple Cider Vinegar (¼ c)
- NEOO Watermelon Rosé Vinegar (¼ c)
- Juice of ½ lime
- Seltzer Water (to serve)
Method

Step 1
Bring water and salt to a boil in a medium saucepan. Add the honey, stir to dissolve. Remove from heat. -
Step 2
Combine the watermelon, basil, mint and lime zest in a large bowl. Add the honey-water and give a quick stir. Let the mixture cool to room temperature. Add both vinegars and lime juice and stir to incorporate. Steep and cover the mixture in the refrigerator for a day. This will really help infuse the natural oils from the herbs. -
Step 3
Strain the mixture and pour the concentrate into a glass jar and store in the refrigerator for up to 1 week. -
Step 4
To serve, pour 1/4 cup of the concentrate into a glass over ice and dilute with 3/4 cup of sparkling water. Option to garnish with the watermelon cubes, lime slices and spearmint leaves!
Notes
- Yields about 2 1/2 cups of concentrate
- If you are tight on time, you can refrigerate for a few hours - but the longer the better!
- We cut the pickled watermelon cubes into smaller pieces and added them into the shrub. They add a refreshing touch!
- Give the shrub a quick swirl if you notice the mixture begins to settle.
